Beef Veggie Soup

     I love soup! I could eat soup every day, even in the dog days of summer. Yesterday I made Beef Veggie Soup and it is so good....and it's what's for dinner again tonight! It's very basic and really easy. If you have read any of my other soup recipes, you know that I don't measure, and this soup is no exception.

Here's how I did it:

I took the French Onion Soup I had in the freezer (the recipe for this is in an earlier post) and put it in a big soup pot to thaw.
Then I took a nap! A couple of hours later, I heated it up til it was boiling. While that was happening, I cut up the stew meat into smaller, bitesize pieces. I would have loved to add a soup bone, but didn't find any at Walmart.
I threw the meat into the broth and let it boil for an hour.
Our family loves garlic! We buy it like this ^^^^^^^^ .
I added a handful of garlic to the broth/meat.
Uh yeah, we love garlic....remember, I am using the French Onion Soup I made on Christmas Eve. It had a bunch of garlic in it, too!
After an hour I added one big russet potato and one turnip, diced about half inch pieces.
Added a 16 oz. package of frozen mixed veggies............
Added a big can of crushed tomatoes.........
Then adjusted and added seasonings. Actually, all I added was some red pepper flakes. The French Onion Soup was tasty already!
     I let this simmer another hour or so. The potato and turnip were well done!
Now it's time for de pasta! I added a little less than half a lb. box of Ditalini pasta. Any pasta will do....we like this or bird eye, small shells, something small. I let that cook until the pasta was tender.

And viola'! Soup is on!!
     I added some alot of shaved Parmesan cheese to my bowl and ate with some club crackers. I think some crusty french bread would have been a better option, but, oh well, we didn't have any :o(

     It was soooo good! Really hit de spot! It is noon on Wednesday here and the heater just kicked on. It's gettin cold down here in Louisiana....the soup is gonna be good tonight, too! I'm gonna make a little salad to go with the soup tonight...light 'n easy.

     I hope you try this soup....just use beef or chicken broth if you don't have any wonderful French Onion soup in your freezer!
